yogurt miso pickles

Last week I tested out a recipe from the ダーリンは外国人 (literally in English, "My Darling is a Foreigner" but I guess it's known in the English speaking world as "Is He Turning Japanese?") cookbook, yogurt-miso pickles. I loved it. It's so easy. You just submerge the veggies in the mixture overnight and you have pickles the next day! They don't taste like miso but like regular salty pickles and the veggies remain crisp.

Last week's and today's lunches with the miso-yogurt pickles:


bento 6.3.09

top: white rice with yukari
bottom: 5 spice duck sausage; zucchini, carrot, and celery miso-yogurt pickles, roasted radishes and tofu; kiriboshi daikon with abura age


bento 6.5.09

top: white rice
bottom: Korean kalbi shortribs, grilled; tamagoyaki with sesame and green onion; carrot, celery, and napa cabbage yogurt-miso pickles


bento 6.8.09

top: fried rice with onion, chicken, napa cabbage, and egg
bottom: tamagoyaki with sesame and green onion; 5 spice duck sausage; napa cabbage yogurt-miso pickles



miso yogurt pickles

-Mix equal parts yogurt and miso (I used a cup each).
-Put veggies in the mixture overnight.
-Remove, rinse, and eat.

We used celery, carrots, radishes, zucchini, and napa cabbage. It'd work great with cucumbers, jicama, and small turnips too. If you're using it over a few days, add a teaspoon of salt to the mixture after a few days. You can also use it as a fish marinade with a firm white flesh fish or salmon; remove it, rinse, and then broil. Just don't put veggies in the mixture after you've used it for fish.

Do you use clear miso or red miso? [or does it matter?] This sounds interesting. Awesome bento's!

I used red since that was all I had, but but my mom used the light kind and she said it worked fine. I don't think it matters too much.

What yummy looking bento :) I will have to get some yogurt and try the pickles - maybe next week after the anime convention :)

Cool! I still have my mixture in the fridge, it'll keep as long as the yogurt is good.

you're welcome! Getting them out of the mixture is the most time consuming and messy part. But the whole process is so fast that I think it's worth it :)

Sorry to bother you again, but did you put the whole zucchini in the yogurt-miso mixture or did you cut them before? I'm really intrigued by that recipe and I've got the ingredients already, I'm ready to start! =D

Ooh a recipe! And it does sound easy! I will have to get me some yoghurt and try that out. Not that my kid is fond of pickles, but *I* am ^_^
